I truly didn't expect this oil to take the place of butter, but it has in all my cooking...so far. I even use it on toast.

Okay, this is uncanny. An olive oil that tastes just like melted butter! I use it instead of butter drizzled over my corn on the cob, or to replace that "pat of butter" on my steak. It's great to sauté my fish with a bit of lemon and garlic. My friend uses it to make the best Indian butter chicken.
