Italian balsamic vinegar is traditionally made from Trebbiano or Lambrusco grapes. They originate specifically from Modena, Italy. They are aged for a minimum of 18 years. Dark balsamic undergoes a caramelizing process. This gives it a distinctly deep, rich, and velvety taste. White balsamic is not caramelized. It offers a sweeter, clearer taste. Importantly, no additional sugars are added to our whites.

The goal of the COOC is to encourage consumers to use California olive oil because it contains healthy and fresh ingredients, which is essential if you’re cooking with it daily. We only source our products after meeting with the producer and confirming that they live up to our high olive oil store standards.

Best Sweet Garlic Balsamic

I love secolari product. This sweet garlic balsamic is the best in the market.

Not as good as it used to be

We first discovered Secolari at its store in Columbia, MD, and fell in love with the sweet garlic (although we also like and have bought other vinegars and oils). When the store in Columbia closed, we were thrilled to find the shop in Ellicott City that sold Secolari, not far from our home. After moving to Florida, we decided to place an order despite the steep shipping costs. While we loved that the original formulation, when used as a salad dressing, used to coat the ingredients without overwhelming them, the new vinaigrette settles in a watery pool in the bottom of the bowl. It's neither as thick nor as flavorful and that's a disappointment.

Love, love, love Sweet Garlic Balsamic....goes great with Italian Herb or Basil Olive Oil as a salad dressing or marinade for beef, chicken or lamb. I've even used Sweet Garlic on seared scallops when not using fresh garlic just to achieve the garlic flavor...let your imagination roam.
